Plate Waste=9.09%
Tomorrow I am in the kitchen for day 2. I am hoping to get more average weights of the standard menu items that will be seen on the regular. I am hoping this will lead to more accurate results when calculating the total food output. It will be interesting to see how these results will vary compared to sold out restaurants (90 covers) in the future. More results to come!
