Later on in the month Bruce will be representing UGSRP speaking and facilitating a panel discussion at the Restaurant Canada show in Toronto. The event is entitled “The Business Case for Sustainability” and will take place from 2:15 – 3:30 on Sunday February 25th on the Speaker Stage. And please join us on Wednesday March 7th from 3:30-5:30 for our very own UGSRP Symposium, our 7th! This free public forum is entitled “Plant Based Menus, Fad or Trend?”. Our keynote speaker is Steven Salm, President of Chase Hospitality.
Steven will be sharing his journey in opening and operating several plant-based restaurants. Steven’s talk will be preceded by a presentation by our very own Mike von Massow. Mike will be updating the audience on some of our recent research findings on food waste and menu labeling. The event will wrap up with a panel discussion on plant- based menu items. Moderated by Bruce, the panel will include industry experts; Steven Salm, Chase Hospitality, Mark Hladik, VP Operations Earls, Sal Howell, Proprietor of River Cafe and Boxwood in Calgary, Jason Jurchuck, Owner of Henry’s Tempeh, and Chef Daniel Hadida of The Restaurant at Pearle Morisette.
