Waste not want not!

I recently attended an event at the University of Guelph Library that was promoting their expansive Canadian cookbook collection.  Thumbing through several of the 19th century journals on display I was quick to realize a theme that I couldn't recall in modern incarnations of cookbooks.  Waste, and how to limit it was  ever-present throughout the recipes and pages … Continue reading Waste not want not!

Some goings on!

We are well into the winter semester here at the University of Guelph. Once again we are measuring plate waste at PJ's as well as running some other exciting projects.   Professor Bahram Gharabagi has a group from his 3rd year engineering class studying what it would cost to overhaul PJ's kitchen equipment to 'state of the art' Energy Star products.  They … Continue reading Some goings on!

Low hanging fruit…..and plastic?

Perhaps it is my increased sensitivity to restaurant waste but I have noticed a worrisome trend happening.  Restaurant servers seem to feel they are providing better service to me by placing straws and lemons in my glass when I ask for tap water.  In fact a recent trip to one of my favorite cafe's  found the server … Continue reading Low hanging fruit…..and plastic?

The Sustainable Food Lab

I had the pleasure of attending last week’s 2011 Sustainable Food Lab Leadership Summit in Portland Oregon.  The goal of the Food Lab is clearly presented in the organization’s mission which states; “The mission of the Sustainable Food Lab is to accelerate the shift of sustainable food from niche to mainstream.” The Food Lab accomplishes … Continue reading The Sustainable Food Lab

The people behind “Sustainability”.

In the last few weeks I’ve started to learn a couple of things about how you can help ‘sustainability’ happen in your organization.  First and foremost, seek out people to help you!  We saw this happen early on in the project with Mark and Gillian from the University’s Physical Resource and Sustainability Departments. Most recently … Continue reading The people behind “Sustainability”.
